Zucchini Bread.

 

One of my goals this year is to have Jorryn continue working on practical skills. While this can sometimes prove a challenge for this type a mama, it’s necessary. He’s learning how to correctly take care of a home and himself. When I get particularly overwhelmed, I remind myself how awesome it is that he will learn this lesson at 9 instead of 19 or 29! đŸ™‚

 

Last week, Jorryn baked two loaves of zucchini bread himself! He did a fabulous job and it turned out soooo delicious. I was really proud of him. More importantly, he was proud of himself.

 

Zucchini Bread Ingredients

3 eggs

2 cups of sugar

1 cup veggie oil

1 teachspoon vanilla

2 cups coarsely grated zucchini

2 cups flour

1 teaspoon cinnamon

1 teaspoon baking soda

1/4 teaspoon baking powder

1 teaspoon salt

1/2 cup chopped nuts, optional

How to Make Zucchini Bread:

 

Preheat oven to 350 degrees. Mix all ingredients. Spray two bread  loaf pans {approximately 8″ x 4″ x 3″} with cooking spray. Pour batter into pans, distributing evenly. Bake for one hour until a knife comes out clean. Allow loaves to cool for 10 minutes before removing from pans. Cool on wire rack. Slice and serve!
