Pepper Spaghetti with Chicken.

 

It seems like some of our family’s favorite meals comes from my “whoops” in the kitchen. This is another example! Over the weekend, I was faced with the dilemma of what to make which some plain chicken breasts. Jorryn begged for his “favorite kind of chicken” which I make in a pan with olive oil until it has a delicious crisp to it. Although I could serve just chicken for dinner, I decided everyone would appreciate a little more. And here we are!

 

Ingredients for Pepper Spaghetti with Chicken

  • 6 servings of spaghetti, cooked
  • 1/3 cup of EVOO
  • 2 tablespoons garlic
  • 1 1/2 teaspoons crushed red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 chicken breasts
  • additional olive oil for the chicken

 

This dish was so easy to create! First, I started the chicken breasts. I decided to cube it into bite sized pieces, but you could easily leave them whole as well. I cooked the chicken for about half an hour over medium heat, drizzled in EVOO, with a dash of salt and pepper on the meat. It will develop the most delicious, crispy taste. Almost like fried chicken.. only better! When the chicken was almost completely cooked, I started the spaghetti.

While the spaghetti cooked, I mixed the other ingredients in a bowl. Once the spaghetti was al dente, I drained it. Then I mixed the spaghetti and chicken together before drizzling it with the other ingredients and mixing thoroughly.

I can’t even describe how yummy it is! There is a little kick from the pepper, but not overpowering. All of us really enjoyed it! The small portion that was left over was also great warmed up the next day!
