Muffin Pancakes.

 

We love a good pancake breakfast in this house! Sometimes it’s hard for me to stand and make all the pancakes though! I’ve tried doing multiple pans before even, to help speed up the process. Unfortunately, with the boys running around, anxious to eat, it can be a challenge to get the pancakes cooked instead of burnt or raw.

 

Welcome to the wonderful idea of muffin pancakes. The pancake batter goes in muffin tins, which go in the oven. They’re all cooked evenly and perfectly with minimal effort. It’s a lot easier to get chores done or make the rest of the meal while these cook in the oven. Genius!

 

Ingredients for Muffin Pancakes

  • 1 1/2 cups all-purpose flour

  • 3 1/2 teaspoons baking powder

  • 1 teaspoon salt

  • 1 tablespoon white sugar

  • 1 1/4 cups milk

  • 1 egg

  • 3 tablespoons butter, melted

  • 2 teaspoons vanilla

Preheat oven to 350 degrees. Spray a muffin tin with non-stick spray. Pour an even amount of batter into each tin. Bake in the oven for 35-45 minutes until they’re golden brown. Remove and cool. Serve with butter, fruit, or syrup! We loved ours with strawberries. Enjoy!!

    Oh, these look SO good! The strawberries on top are the clincher for me!
