Kid Friendly Chicken and Veggie Bowl.

A few days ago, I was faced with the dilemma of what to do with leftover brown rice and plain, baked chicken breast that was hanging out in our fridge. I ended up making this easy dish for lunch that the boys absolutely loved.


  • 3 cups cooked rice {I used brown}
  • 1 shredded chicken breast, fully cooked
  • 1 bag frozen veggies {I used a mix carrots, green beans, peas, and corn} You could easily use fresh this time of year as well!
  • butter {I think I ended up using about two tablespoons.. I didn’t do a very good measuring this! :)}


In a skillet over low-medium heat, I crisped up the brown nice and shredded chicken breast. I wanted it to be similar to fried rice from the Chinese restaurant. You could easily add an egg to this dish to make it like real fried rice! After the rice and chicken had a nice crisp to it, I added the veggies and cooked until they were tender. I stirred it often so that nothing burned.


The boys completely devoured this and had seconds! It’s always fun to find something they enjoy that has veggies in it! I was also glad to be rid of the leftovers! 🙂
