Hamburger and Rice Bowl

The other day, I had a large bowl of cooked brown rice left in my fridge from dinner the night before. I debated with what to make with it, before deciding to put this concoction together. I’m glad I did because everyone loved it and asked for seconds!

 

Ingredients for Hamburger and Rice Bowl

 

  • half a pound of hamburger {you could probably also use ground turkey!}
  • half an onion
  • 2 cups rice {you could use leftovers or fresh}
  • 2 cups corn {I used frozen}
  • salt and pepper to taste

How to Make Hamburger and Rice Bowls

 

First, I cooked the hamburger. I chopped the onion and cooked it with the meat. Once the meat was completely cooked, I combined the leftover rice and corn with the hamburger in a pot over medium-low heat. I stirred often since I was just combing the ingredients to warm the rice and corn. After about 10 minutes, everything was warm and I added salt and pepper to taste before serving.

 

The flavor was delicious! I loved that I was able to stretch my half pound of hamburger into a full, satisfying meal. The boys were disappointed there weren’t leftovers even so that means success in my book!

    That looks really good! I do a lot of those “what am I going to do with this” dinners too and they usually are really great! Moms are great!

    This would be a quick meal, to put together. I would use veggie burger crumbles and add more veggies, though.
