Easy & Freezer Friendly Morning Glory Muffins

Morning Glory Muffins.




Our entire family loves these easy and delicious Morning Glory Muffins. One of my friend’s moms used to bake these regularly for us in high school and they were a favorite. After spotting the recipe on Money Saving Mom, I adapted it for us. I love that they have some secret nutrition in them. The boys only taste a delicious treat: they don’t know that mommy packed all sorts of goodies inside. Not only are they super easy to make, they freeze wonderfully. That is, if you have any left! I normally make a double or triple batch of this recipe. That way we have some to enjoy immediately, plus more to freeze and eat later.


Ingredients for Morning Glory Muffins


  • 2 cups flour
  • 3/4 cup sugar
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoon salt
  • 2 cups shredded carrots
  • 1/2 cup shredded zucchini
  • 1/2 cup unsweetened flaked coconut
  • 1 apple, peeled, cored, and shredded (I have also substituted a pear and loved it)
  • 3 eggs
  • 1 cup veggie oil
  • 2 teaspoons vanilla extract




To Bake Morning Glory Muffins

Preheat oven to 350 degrees F. Grease 12 muffin cups, or line with paper muffin liners.

In a large bowl, mix all ingredients. Distribute evenly in your muffin cups and cake in your preheated oven for 20 minutes or until a toothpick inserted in the center comes out clean.

To freeze: wait for your muffins to cool completely and then place them in a freezer safe dish or bag. To thaw, leave on the counter for an hour or microwave.
