Eggs and tortillas are one of our family’s absolute favorites! They are great for breakfast, lunch or dinner and the leftovers warm up great! The recipe is very easy and it tastes amazing with salsa and a side of fresh fruit.


First, I melted a stick of butter over medium heat in a skillet. {Yes, a whole stick. I’m secretly Paula Deen’s soul sister.} Then, I ripped up 18 corn tortillas into bite-sized chunks and layered them in the pan.

I flipped and stirred the tortillas in the butter until they were a little crispy.

Once the tortillas were all crispy, I whisked a dozen eggs and poured them over the tortillas. Cook until the eggs are done on one side. I then use a pancake flipper to divide the pan into quarters and flip a quarter at a time so that the eggs can cook on the second side. Once your eggs are set, you’re ready to serve! They’re great with salt and pepper, salsa, or even chopped cilantro!

  • 1 stick of butter
  • 18 corn tortillas, ripped into bite sized pieces
  • 12 eggs, whisked
  1. Over medium heat in a skillet, melt one stick of butter. After its melted, add tortillas. Once tortillas are crispy, pour the eggs over them. Cook eggs on both sides and then serve once cooked!

    I never tried this recipe before. It looks so yummy and I really love it because it is easy for me to cook!
