Chicken and Stuffing {in the Crockpot}

I love using my slow cooker in the summer time! It’s easy way to make our favorite chicken dishes without having to heat up the kitchen! We’ve had some especially hot days this week here in Michigan, so I did everything possible to keep our house cool!

 

Chicken and Stuffing Recipe.

 

This dish is easy to prepare and tastes delicious! There are never any leftovers when I make this, which is always the sign of a winner for me!

 

Ingredients for Chicken and Stuffing:

  • 2 boneless skinless chicken breasts
  • 1 box of stuffing mix
  • 1 package frozen corn
  • 1 can cream of chicken soup
  • 3/4 cup sour cream
  • 1/2 an onion, finally chopped
  • 1 tablespoon garlic {I know, I just can’t get away from the stuff!}
  • 1 tablespoon mustard
  • salt and pepper to taste

 

Place your chicken in the bottom of your crockpot. Turn it on high. Mix all other ingredients together until they’re well incorporated. You want to make sure that the stuffing isn’t just dry — you want all the wet ingredients to be well mixed with it so it cooks well! Pour the stuffing mixture on top of the chicken. Let cook for 4-6 hours. I occasionally stir the stuffing as it’s cooking so that it’s not mushy in one spot and dry in another. Once the chicken is cooked, it starts to fall apart right in the slow cooker. Yum! Serve with a salad or more veggies. Enjoy!
