Breakfast Casserole.

 

We love breakfast for in our house. In a big kind of way. I might even say that bacon is a pretty main food group in my mind. 😉 I especially love doing breakfast for dinner since I usually have more time to prepare than in the morning whenever is busy starting their day. This breakfast casserole is a new favorite in our house. Everyone loved it! The leftovers were also great warmed up!

Ingredients for Breakfast Casserole

 

  • 1 box stuffing mix
  • 1 pound sausage
  • 10 eggs
  • 1/2 cup chicken stock
  • 2 cups shredded cheese, I used cheddar
  • 1 chopped onion
  • 2 large potatoes, cubed
  • salt and pepper to taste

 

How to Make Breakfast Casserole

 

First, I browned the sausage in small chunks in a pan. I also preheated the oven to 400 degrees. Next, I sprayed some homemade cooking spray in a glass casserole dish. I poured the stuffing mix in an even layer across the bottom of the dish. Then, I evenly distributed the cubed potato, cooked sausage and chopped onion around the dish. Next, I scrambled the eggs and chicken stock in a measuring cup, and then poured them all over the other ingredients. Finally, I sprinkled the cheese evenly across the dish. I baked it for 30 minutes until the cheese was melted and the stuffing,  potatoes, and onions were perfectly cooked.

This was SO delicious! The stuffing was perfectly crispy and added an incredible flavor to the dish. We enjoyed this for dinner, but it could easily be made in the morning as well. You could even pre-cook the sausage to make for a quicker cook time in the morning! You could also add or substitute bacon, or add other veggies like peppers! Enjoy!!
